A Spice is a dried seed, fruit, root, bark, or vegetative substance primarily used for flavoring, coloring or preserving good. Sometimes a spice is used to hide other flavors. Spices are distinguished from herbs, which are parts of leafy green plants also used for flavoring or as garnish.
Many spices have antimicrobial properties, they are more commonly used in warmer climates, where more infectious disease, are prevailing. A spice may have an extra use, usually medicinal, religious ritual, cosmetics or perfume production, or as a vegetable.
India is the world’s largest producer of turmeric (Curcuma longa), a perennial herbaceous plant of the ginger family. The plant’s underground stems or rhizomes have been used as spice, dye, medicine and religious maker since antiquity. Tamil Nadu is the third largest grower of turmeric in the country (behind Telangana and Maharashtra), with 1.37 lakh tonnes produced in 2017-18. A Condiment is an edible substance, added to food to impart a particular flavor, enhance its flavor. In Tamil Nadu a variety of spices like Chilies, Tamarind, Coriander, Cardamom, Pepper, Curry leaves and other minor spices like Garlic, Ginger, Cloves, and Mint are grown.
The major districts contributing towards the production of Chilies are Ramanathapuram, Thoothukudi, Sivagangai, Vellore and Dindigul. Attempts are made to bring more area under samba chilies than mundu chilies in Ramanathapuram and Sivaganga Districts through farmers clusters. This will help farmers to fetch more price due to its high oleoresin content and pave way for establishing value addition unit in that area.
